6 tart apples
4 egg yolk
1 cup powdered sugar
1/4 cup almonds, ground
1 lemon, zested
Unbaked puff pastry shell
4 egg whites
4 tablespoons sugar
Peel and grate apples. Beat together egg yolks, sugar, almonds, and lemon zest. Pour into unbaked pastry shell. Bake at 400°F for 20 to 30 minutes. Top with meringue of egg whites and sugar whipped to form large peaks. Bake 8 to 10 minutes or until slightly browned.
