1 tablespoon cornstarch
2 tablespoons cold water
1/2 cup boiling water
Pinch salt
3 egg whites
6 tablespoons sugar
1 teaspoon vanilla extract
Mix together cornstarch and cold water; add boiling water with a pinch of salt. Cook until thickened; then cool completely. Beat egg whites until stiff; add sugar and vanilla. Fold cornstarch mixture into egg whites.
NOTE: The addition of the cornstarch causes the meringue to stand up better and longer.
