MERINGUE SHELL
3 egg whites, at room temperature
3/4 cup sugar
Pinch salt
1 teaspoon vanilla extract
FILLING
1 cup sugar
1 envelope unflavored gelatin
3 egg yolk
3/4 cup evaporated milk
3/4 cup fresh lime juice
3 egg whites
1/4 cup sugar
1/2 cup heavy cream
MERINGUE SHELL:
Beat egg whites until soft peaks form; add sugar, salt and vanilla. Spread meringue against bottom and sides of baking dish; bake at 225°F for 1-1/2 hours; turn oven off and let stand in oven 1 hour or more.
FILLING:
Mix sugar, gelatin, egg yolks and evaporated milk in sauce pan and cook on low heat until mixture coats a spoon. Remove from heat and add lime juice; chill about 2 hours. Beat egg whites until stiff; fold into lime mixture. Whip cream and fold into lime mixture. Chill about 1 hour; spoon into meringue shell; chill 2 hours.
