1 1/4 cups sugar
6 tablespoons cornstarch
2 cups boiling water
1/3 cup lemon juice
3 egg yolk, beaten
3 tablespoons butter
1 1/2 teaspoons lemon extract
2 teaspoons vinegar
Few drops yellow food coloring, optional
Baked pie shell
1 recipe
Mix together sugar and cornstarch; add boiling water and mix to a thick paste in top of double boiler; cook until bubbly. Add lemon juice. Beat egg yolks; add a small amount at a time and cook again until bubbly. Remove from heat; add butter, lemon extract, vinegar and food coloring (optional); stir. Pour into baked pie shell. Prepare Special Meringue per directions and add to top of pie.
