1/3 cup uncooked rice
2 cups milk
2 egg yolk
2 tablespoons butter
3/4 cup brown sugar, packed
1/2 teaspoon vanilla extract
2 egg whites
Wash rice; put into double boiler with milk. Cook, stirring often for 1 hour. Just before rice is done, remove from heat; add egg yolks, butter and brown sugar. Cool and add vanilla. Whip egg whites until stiff and fold into mixture. Pour into casserole and bake at 350°F for 30 minutes. Serve with cream.
