Curried Tuna Salad With Toasted Pecans

Be sure to choose tuna that is packed in water, not oil. By choosing water-packed tuna, you can save 70 calories and 6 grams of fat per 3-ounce serving.



   _ cans (6 ounces each) tuna in water, drained
   ___ cup fat-free mayonnaise or salad dressing
   _ 1/2 teaspoons sugar
   _ teaspoon curry powder
   _ can (8 ounces) sliced water chestnuts, drained and cut into slivers
   ___ cup chopped celery
   _ can (8 ounces) pineapple tidbits, drained
   ___ cup chopped bell pepper
   _ small onion, finely chopped (1/4 cup)
   _ slices reduced-calorie whole wheat bread, toasted and cut diagonally in half
   _ medium unpeeled eating apples, sliced
   _ tablespoons chopped pecans, toasted


1. Mix tuna, mayonnaise, sugar and curry powder in medium bowl. Stir in water chestnuts, celery, pineapple, bell pepper and onion until well blended.
2. Arrange 2 toast halves on each plate. Sprinkle pecans over tuna mixture.

*To toast nuts, bake uncovered in ungreased shallow pan in 350° oven about 10 minutes, stirring occasionally, until golden brown.
