LOW FAT/LOW CHOLESTEROL/LOW CALORIE

4 sub rolls or one 8-ounce baguette
2 tablespoons balsamic vinegar or red wine vinegar
24 slices turkey pepperoni
4 slices tomatoes, cut in half
2 cups shredded lettuce
1/2 medium red onion, thinly sliced
1/2 medium bell pepper, cut into thin strips
1/4 cup fat-free Caesar dressing
1/2 cup shredded low-fat mozzarella cheese (2 ounces)
1. Cut rolls horizontally in half (if using baguette, first cut into fourths). Drizzle vinegar over bottom halves. Top with pepperoni, tomato, lettuce, onion and bell pepper.
Drizzle with dressing. Sprinkle with cheese. Top with roll tops; press gently. Cut each sandwich diagonally in half.
