Use fresh carrots for the best flavor!
_ to 5 carrots, chopped
_ cup pasteurized process cheese spread, cubed
___ cup butter
___ onion, finely chopped
___ cup potato chips, crushed
In a medium saucepan, cook carrots in salted water about 12 minutes; drain. Stir in cheese, butter and onion. Place mixture into a 2-quart baking dish coated with non-stick vegetable spray; top with potato chips. Bake, uncovered, at 350 degrees for 30 minutes.
