Summer Chicken Kobobs

Ingredients

1/4 cup lime juice
2 tablespoons olive oil
1 tablespoon minced parsley
1/2 teaspoon dried thyme
1 clove garlic, minced
Fresh ground pepper
2 whole boneless, skinless chicken breasts, cubed
1 small yellow squash, cut into 2-inch pieces
1 small zucchini, cut into 1-inch pieces
4 large cherry tomatoes

Directions:

1. In a shallow dish, combine lime juice, oil, parsley, thyme, garlic, and pepper mix well.

2. Add chicken, yellow squash, and zucchini, tossing to coat. Cover and refrigerate for 2 hours.

3. Alternate chicken, squash, and zucchini onto each of the skewers.

Grill 4 inches from heat for 10 minutes, turning frequently. Add cherry tomatoes to each skewer during the last 1 minute of cooking. Remove from heat and serve.
