Marinated Chicken Kabobs

Serves: 4

Serving size: 3-4 oz

These kabobs are great to grill on a hot summer night.


   4 teaspoons fresh lemon juice
   1/2 teaspoon cayenne pepper
   Fresh ground pepper
   1 Inch piece of fresh ginger, peeled and minced
   1 teaspoon curry powder
   4 teaspoons olive oil
   2 whole boneless, skinless chicken breasts, halved, cut into 1/4-inch strips


1. In a medium bowl, combine all ingredients except the chicken. Add the chicken and let marinate overnight in the refrigerator.

2. Thread the chicken onto metal or wooden skewers.

3. Grill over medium heat until chicken is cooked throughout, about 15 minutes. Transfer to a platter and serve.
