1. Heat the oil in a large skillet or wok. Add the chicken, garlic, and ginger. Stir-fry until chicken turns white, about 5 minutes. Stir in the soy sauce, celery, mushrooms, and zucchini.
2. Cover and continue to cook for about 5 minutes.
3. Add the cornstarch to the water and slowly add this mixture to the chicken, stirring constantly. Continue to cook for 2 to 5 minutes until mixture is thickened. Remove from heat and serve.
