Broiled Salmon Steaks

Ingredients

Garlic Butter:
1/2 cup butter real, softened
1 tablespoon green onion or shallots, minced
2 cloves garlic minced
2 tablespoons parsley minced fresh
Salt and freshly ground pepper to taste
Salmon Steaks:
4 salmon steaks 1-inch thick
Salt and freshly ground pepper to taste
2 lemons halved

Directions:

Heat broiler. Blend all ingredients for garlic butter until smooth either with fork or in a food processor. Pat salmon steaks dry between paper towels. Place steaks on greased rack of broiler and spread 1/2 of garlic butter on top. Place under hot broiler 4 to 6 inches from heat for 7 minutes. Carefully lift steaks with spatula and turn over spread uncooked side with remaining butter. Season with salt and pepper broil as above. Place on heated serving platter and garnish with lemon halves. Serve immediately.
