Greek Pizza

Ingredients

Crust
1 cup shredded Kasseri or mozzarella cheese (4 ounces)
1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
1/2 pound ground lamb
1 tablespoon snipped fresh or 1 teaspoon dried oregano leaves
1 medium tomato, chopped
1/2 cup crumbled feta cheese
1/2 cup Greek or ripe olives, cut up
CRUST
1 package active dry yeast
1 cup warm water (105° to 115°)
2 1/2 cups all-purpose flour
2 tablespoons olive or vegetable oil
1 teaspoon sugar
1 teaspoon salt

Directions:

1. Place oven rack in lowest position of oven. Heat oven to 425°.
2. Prepare Crust sprinkle remaining ingredients evenly over top to within 1/2 inch of edge. Bake on lowest oven rack until crust is golden brown, 25 to 30 minutes. Drizzle with 1 tablespoon olive oil if desired.

1. Dissolve yeast in warm water in 2 1/2-quart bowl. Stir in remaining ingredients beat vigorously 20 strokes. Let rest 5 minutes.
2. With floured fingers, press dough in greased 12-inch pizza pan or into 11-inch circle on greased cookie sheet
