It's now popular to think of the United States not so much as a melting pot but as a giant tossed salad, since its components--the people, their cultures--tend to retain much of their original character, blending with, yet complementing one another. Nowhere is this more apparent in American cooking than in the recipes for light meals and snacks.




The influences of Western Europe are well represented here, from the French taste of Garlic Chicken Provençal Soup to the many Italian-derived recipes such as Italian Spinach Torta and Sicilian Mushroom Flatbread to Greek flavors in dishes such as Mushroom Phyllo Tarts. Asian influenced recipes include Sweet 'n Sour Chicken Wraps, while Indian flavors are present in Crescent Samosa Sandwiches. Mexican and Southwestern U.S. flavors are very popular, visible in dishes from chimichangas to Puffy Chiles Rellenos, reflecting the profound impact these zesty flavors have had on the way Americans eat. Other regional American cuisines are also well represented, from Black-eyed Peas and Pork Gumbo from the South to Great Northern Bean Stew, which speaks of New England. And of course, there is the broad category of food that might be called "comfort food" because the recipes are so thoroughly American and taste wonderfully familiar--Tuna Cheese Flips and Savory Salmon-Filled Crescents are perfect examples, appealing to both adults and children. As American lifestyles become busier and busier, no food is better for a satisfying meal-on-the-go than a hearty sandwich. Soups, sandwiches and snacks have become a flexible part of the American diet, enjoyed morning, noon and night, and they are being adapted in an endless variety of ways.
