Asian Chicken Salad with Peanut-Soy Dressing

   Peanut-Soy Dressing (below)
   _ cups coleslaw mix
   _ cups washed fresh spinach leaves (from 10-ounce bag)
   _ cups chopped cooked chicken
   _ medium green bell peppers, thinly sliced
   _ can (8 ounces) bamboo shoots, rinsed and drained
   
   Peanut-Soy Dressing:
   _ tablespoons reduced-sodium soy sauce
   _ tablespoons cider vinegar
   _ tablespoons honey
   _ tablespoon creamy peanut butter
   ___ teaspoon crushed red pepper flakes
   ___ teaspoon grated ginger root


1. Make Peanut-Soy Dressing.

2. Toss remaining ingredients in large bowl. Drizzle with dressing. Serve immediately.

For Peanut-Soy Dressing:
Beat all ingredients with wire whisk until blended.
