1 pound veal
1 onion, chopped
1 clove garlic, chopped
1/4 pound sausages
2 tablespoons parsley
Salt and pepper
2 tablespoons olive oil
2 tablespoons butter
2 cups chicken stock
1 carrot, chopped
1 stalk celery, chopped
2 tomatoes, peeled and chopped
Slice veal; pound into thin slices. Cook onion, garlic, and sausage in frying pan until tender; add parsley, salt, and pepper. Divide mixture onto veal slices and roll up; fasten with toothpick. Roll into flour and fry in olive oil and butter mixture. Add chicken stock, carrot, celery, and tomatoes. Cover and simmer 45 minutes.
