Veal Rolls

Ingredients

1 pound veal
1 onion, chopped
1 clove garlic, chopped
1/4 pound sausage
2 tablespoons parsley
salt and pepper
2 tablespoons olive oil
2 tablespoons butter
2 cups chicken stock
1 carrot, chopped
1 stalk celery, chopped
2 tomatoes, peeled and chopped

Directions:

Slice veal pound into thin slices. Cook onion, garlic, and sausage in frying pan until tender add parsley, salt, and pepper. Divide mixture onto veal slices and roll up fasten with toothpick. Roll into flour and fry in olive oil and butter mixture. Add chicken stock, carrot, celery, and tomatoes. Cover and simmer 45 minutes.
