1 pound ground beef
1/2 cup dry bread crumbs
1 egg, slightly beaten
2/3 teaspoon salt
1/8 teaspoon pepper
Few grains nutmeg
2 tablespoons olive oil
2 tablespoons butter
2 tablespoons flour
1 3/4 cups consomme
Salt and pepper, to taste
Combine ground beef, bread crumbs, egg, salt, pepper, and nutmeg; form into balls. Cover and let stand 1 hour. Brown meat balls in olive oil. In another griddle melt butter; add flour and stir to blend. Gradually add consomme, salt, and pepper while stirring. Add meatballs; cover and simmer about 1 hour.
