Pinto Beans At Their Best

Serves: 8

   1 pound dried beans
   5 cups water
   3 medium onions, chopped
   2 teaspoons salt
   1 pound Italian sausages skinned and cut into 1 inch pieces
   2 green pepper, diced
   1 (16-ounce) can stewed tomatoes
   1 teaspoon leaf oregano
   1/2 teaspoon cumin seeds
   1/2 teaspoon pepper


Bring beans and water to a boil for 2 minutes; remove from heat and let stand 1 hour. Return to heat, bring to a boil; add onions and salt. Simmer one hour. Brown sausage in large skillet; remove sausages and drain. Cook peppers in drippings; add tomatoes. Crush oregano; add. Crush cumin seeds; add. Add pepper. Drain beans, reserving the liquid; combine mixtures into baking dish; cover with reserved liquid and bake at 325°F for 2-1/2 to 3 hours or until very tender.
