Lima Beans With Tomato Sauce

Serves: 4

   2 cups lima beans
   1 1/2 teaspoons salt
   4 cups water
   1 cup onions, chopped
   1 cup green peppers, chopped
   1 can tomato sauce
   Water as needed to keep covered
   Sliced ripe olives
   1/4 cup grated Parmesan cheese


Boil lima beans and salt in water for about 2 minutes; then let stand one hour. Add onion, green pepper, tomato sauce, and water as needed; simmer until beans are tender. Put into baking dish; add olives and parmesan cheese. Bake at 375°F until bubbly hot.
