Pinto Bean Chili

Serves: 5

Print this Recipe

1 pint pinto beans or red beans
   1/2 cup olive oil
   1 large chopped onion
   6 cloves garlic, chopped
   1 tablespoon cumin seeds
   1 tablespoon chili powder
   1 pound ground beef
   Grated Cheddar cheese
   Sour cream

Soak beans overnight. Cook with lots of water; drain. In olive oil, cook onion, garlic, cumin, and chili powder for about ten minutes, do not brown. Sauté ground beef and render out fat. Add meat and onion mixture to beans. Add water to make plenty of juice, so beans won't burn. Cover and bake at 350°F for 45 minutes. Serve with grated cheese and sour cream.
