Baked Lentils


Serves: 6

Ingredients

1 cup dried lentils
3 cups water
2 teaspoons olive oil
1 small onion, chopped
3/4 teaspoon salt
1 small can stewed tomatoes, drained
1 small green pepper, chopped
2 green onions, chopped

Directions:

Rinse, drain and put dried lentils into pan. Add water, olive oil, small onion, and salt and simmer for about 30 minutes. Add tomatoes, green pepper, and green onions. Bake at 300°F for about 1 hour.
