A Simple Tamarind Barbecue Sauce

THAILAND
Makes about 1 cup

Most North American barbecue sauces play the sweetness of sugar or molasses against the sharpness of vinegar and hot sauce. A similar contrast of sweet and sour characterizes the barbecue sauces of Thailand. The following sauce, inspired by one served at the restaurant Bahn Thai in Bangkok, derives its piquant flavor from tamarind. It is particularly good with grilled chicken or fish.

I leave the number of chiles you use up to you.


   ___ c Tamarind Water (see recipe under "Ground Meat, Burgers and Sausages") or frozen tamarind puree, thawed
   ___ c asain fish sauce
   ___ c sugar
   _ tbs water
   _ shallots, large, finely chopped
   _ to 6 serrano chile, , Thai or jalapeno, thinly sliced (for a milder sauce, seed the chiles)


Combine the Tamarind Water, fish sauce, sugar, and water in a small bowl and whisk until the sugar is dissolved. Whisk in the shallots and chiles and serve immediately, or at least the same day you make it; serve at room temperature.

Makes about 1 cup
