A Simple Javanese Dipping Sauce

1 cup peanut oil
1 shallot, large, cut into thin wedges
3/4 cup soy sauce, sweet (ketjap manis) or 6 tablespoons each regular soy sauce and molasses
2 to 4 serrano chile, , Thai, or other hot chiles, thinly sliced (for a spicier sauce, leave the seeds in)
4 limes wedges, juicy, for serving


1. Heat the peanut oil in a small, heavy skillet, over medium-high heat until rippling (350° F). Add the shallot wedges and fry until crisp, about 30 seconds. Remove with a slotted spoon to paper towels to drain.

2. Divide the sweet soy sauce among 4 small bowls. Sprinkle each with sliced chiles and fried shallots, then with a generous squeeze of fresh lime juice. Use as a dip the dipping action will mix the ingredients.
