1/4 cup vegetable oil
2 tablespoons honey
2 tablespoons red wine vinegar
2 tablespoons lemon juice
1/2 clove garlic minced
1/4 teaspoon salt
1/8 teaspoon black pepper
2 peaches medium, peeled and sliced
1 red onion small, thinly sliced
5 cups lettuce torn leaf
1/3 cup pecans chopped toasted
In a medium bowl, mix oil, honey, vinegar, lemon juice, garlic, salt and pepper until blended. Gently stir in peaches and red onion. Cover and chill for 1 hour, stirring occasionally.
To serve, place leaf lettuce in a large salad bowl. Pour on peaches and onion with dressing. Sprinkle with pecans; toss well.
