Avocado And Papaya Platter

Serves: 4

   1/3 cup frozen limeade concentrate or lemonade, thawed
   1/4 cup honey
   2 tablespoons vegetable oil
   1/4 teaspoon ginger ground
   1/8 teaspoon salt
   2 avocados ripe, peeled and sliced
   1 papaya ripe, peeled and sliced
   Lettuce leaves
   1/4 cup macadamia nuts chopped or peanuts


In a small bowl, mix limeade or lemonade concentrate, honey, oil, ginger and salt until blended.

Arrange avocados and papaya on a lettuce-lined platter. Pour on half of the dressing. Sprinkle salad with nuts. Pass remaining dressing separately.
