Rosettes

Ingredients

2 eggs
1 cup flour
1 cup milk
1 tablespoon sugar
1/4 teaspoon salt
vegetable oil
powdered sugar

Directions:

In a medium bowl with a wire whisk, lightly beat eggs. Add flour, milk, sugar and salt beat just until smooth.

In a heavy pan or deep-fat fryer over medium heat, heat at least 2 inches of oil to 375°.

Heat rosette iron at least 30 seconds in hot oil tap excess oil from iron. Dip hot iron into batter just to the top (do not let batter run over top of mold),then place in hot oil and fry until golden brown. The rosette may drop off the iron during frying*. Remove rosettes with a slotted spoon and drain on several layers of paper towels. While warm, sprinkle with powdered sugar. Cool completely.

Store loosely covered in a cool place. Sprinkle with additional powdered sugar before serving if desired.

*If edge of rosette sticks to the iron while frying, release with tip of a sharp knife.
