Honey-Peanut Cookies |

1 1/4 cups whole wheat flour
1/4 cup flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/2 cup butter or margarine, softened
1/2 cup brown sugar packed
1/2 cup honey
1/2 cup chunky peanut butter
1 egg
2/3 cup peanuts unsalted finely chopped
2 tablespoons sugar

In a small bowl, stir whole wheat and all-purpose flours, baking soda and baking powder; set aside.
In a large mixer bowl at medium speed, beat butter or margarine, brown sugar,honey and peanut butter until blended. Add egg and beat well. At low speed,gradually beat in flour mixture until well blended, scraping as needed. Cover and refrigerate for 1 hour or until firm enough to handle.
Meanwhile, in a shallow bowl, stir together peanuts and sugar; set aside.
Preheat oven to 350°.
Shape dough into balls, using a well-rounded teaspoon of dough at a time. Roll in peanut-sugar mixture and place balls 3 inches apart on ungreased baking sheets.
Bake for 10 to 12 minutes or until golden brown. Cool on baking sheets for 1 minute. Transfer cookies to wire racks to cool completely.
Store in an airtight container.
