Dressy French Chicken Sandwiches


Serves: 6

Ingredients

2 cups cubed cooked chicken
1/2 cup chopped red bell pepper (about 1 small)
1/2 cup chopped cucumber
1/2 cup shredded mozzarella cheese (2 ounces)
1/2 cup mayonnaise or salad dressing
2 teaspoons chopped fresh oregano leaves or 1/2 teaspoon dried oregano leaves
1 can (4 1/4 ounces) chopped ripe olives, drained
1 baguette (14 to 16 inches), cut horizontally in half

Directions:

1. Set oven control to broil.

2. Mix all ingredients except baguette. Spoon about 1 1/2 cups chicken mixture onto each bread half.

3. Place on ungreased cookie sheet. Broil with tops 4 to 6 inches from heat about 5 minutes or until hot. Cut each into 3 slices.

The good news-many supermarket bakeries carry excellent baguettes. However, if you can't find them, just use regular French bread.
