Calzone

   _ can refrigerated pizza crust dough
   _ cups shredded mozzarella cheese (8 ounces)
   _ cup cooked chicken, cut into thin strips
   ___ cup ricotta cheese
   ___ cup chopped fresh basil leaves
   _ roma (plum) tomatoes, chopped
   Freshly ground pepper
   _ large egg, slightly beaten


1. Heat oven to 375°. Grease 2 cookie sheets.

2. Divide dough into 6 equal parts. Roll each part into 7-inch circle on lightly floured surface with floured rolling pin.

3. Top half of each dough circle with mozzarella cheese, chicken, ricotta cheese, basil and tomatoes to within 1 inch of edge. Sprinkle with pepper. Carefully fold dough over filling; pinch edges or press with fork to seal securely.

4. Place calzones on cookie sheets. Brush with egg. Bake about 25 minutes or until golden brown.

A calzone is a stuffed pizza that looks like a big turnover. For extra flavor, serve with a jar of tomato sauce for dipping. That's the traditional way!
