Vegetable-Cheese Casserole

Serves: 8

   3 tablespoons butter
   3 tablespoons flour
   4 cups chicken broth
   2 cups chopped broccoli
   1 cup chopped carrots
   1/2 cup chopped celery
   1 onion chopped
   1 clove garlic, minced
   1/4 teaspoon thyme
   1/2 teaspoon salt
   1/8 teaspoon pepper
   1 egg yolk
   1 cup heavy cream
   1 1/2 cups grated Cheddar cheese


Melt butter in large, heavy pan. Add flour and stir. Add chicken broth; blend well and bring to a boil. Add broccoli, carrots, celery, onion, garlic, thyme, salt and pepper; cover and simmer until vegetables are tender. Blend egg yolk with heavy cream; add a little hot mixture than add to vegetables. Stir until thick; then add grated cheese and blend.
