Grilled Sausage and Cheddar Potato Packets

Ingredients

3/4 cup process Cheddar cheese sauce (from 16 ounce jar)
1/2 cup shredded reduced fat Cheddar cheese (2 ounces)
2 cups frozen stir fry bell peppers and onions (from 1 pound bag)
2 cups refrigerated diced potatoes with onions (from 20-ounce bag)
1 pound fully cooked turkey smoked sausage, cut into 1 1/2-inch pieces

Directions:

1. Heat coals or gas grill for direct heat. Spray four 18 12-inch sheets of heavy-duty aluminum foil with cooking spray.
2. Mix cheese sauce and shredded cheese in medium bowl. Stir in stir-fry vegetables and potatoes. Arrange 4 sausage pieces and
1 cup potato mixture on center of each foil piece. Fold foil over sausage and potatoes so edges meet. Seal edges, making tight
1/2-inch fold fold again. Allow space on sides for circulation
and expansion.
3. Cover and grill packets 4 to 6 inches from medium-low heat 20 to 25 minutes, rotating packets 1/2 turn after 10 minutes, until potatoes are tender. Place packets on plates. Cut large across each packet fold back foil.
