Fiesta Taco Casserole

Ingredients

2 cups coarsely broken tortilla chips
1/2 cup reduced-fat sour cream
4 medium green onions, sliced (1/4 cup)
1 medium tomato, chopped (3/4 cup)
1 cup shredded Mexican, cheddar or Monterey Jack cheese (4 ounces)
additional tortilla chips, if desired
1/2 recipe (about 4 1/3 cups) Kid -Pleasin' Chili (below) thawed if frozen, or two 15 to 16-ounce cans
Kid-Pleasin' Chilli
2 pounds ground beef
2 (15-ounce) cans kidney beans, rinsed and drained
2 (10 3/4-ounce) cans condensed tomato soup
2 soup cans water
2 tablespoons instant minced onions
4 to 6 teaspoons chili powder
shredded Cheddar cheese or tiny fishe-shaped crackers, if desired

Directions:

1. Heat oven to 350°. Place broken tortilla chips in ungreased 2-quart casserole. Top with chili. Dollop with sour cream spread evenly. Sprinkle with onions, tomato and cheese.
2. Bake uncovered 20 to 30 minutes or until hot and bubbly. Arrange additional tortilla chips around edge of casserole.

Make tasty bird snacks. Give each child a long piece of string or dental floss knotted at one end and threaded on a big, dull-pointed needle. String with fresh cranberries and popcorn. The finished strings look pretty and the birds will enjoy the fresh nibbles.
