Turkey Tacos

Ingredients

1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon dried oregano
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
1 (8-ounce) can unsalted tomato sauce
4 tablespoons water, divided
1 pound ground skinless turkey breast
8 corn tortillas or flour tortillas, 6-inch
2 tomatoes, finely chopped
1 cup lettuce or spinach, finely chopped
1/2 cup shredded Cheddar cheese
1/2 cup fat-free sour cream

Directions:

1. In a small bowl, combine the cumin, chili powder, oregano, salt, and cayenne pepper. Stir in the tomato sauce and 2 Tbsp water and stir to blend. Continue heating until hot, about 5 minutes.

2. In a large nonstick skillet, over medium-high heat, cook the turkey until browned, about 10 minutes. Reduce the heat to low and stir in the tomato sauce, the reserved spice mixture, and 2 Tbsp water. Cook, stirring occasionally until bubbling, about 5 minutes.

3. To make the tacos, heat the tortillas according to package directions. Fill each taco with a small amount of the meat mixture, then tomatoes, lettuce, and 1 Tbsp each of the cheese and sour cream. Fold the tortilla in half and serve.

NOTE: We've used soft tortillas, which are lower in fat than the hard-shell type. If you prefer hard-shell tacos, you can easily use half the shredded cheese amount to even out the fat. To keep soft tortillas from drying out when warmed, heat them in the microwave between sheets of dampened paper towels for 15-20 seconds each.
