Scalloped Potatoes

Ingredients

6 medium potatoes (4-oz each), unpeeled
4 cups water
1 tablespoon olive oil
1/3 cup chopped onion
2 egg substitute equivalents
1 cup low-fat sour cream
Fresh ground pepper
2 ounces low-fat Cheddar cheese, shredded

Directions:

1. Wash potatoes and place in a saucepan with water. Bring to a boil, lower the heat, and let potatoes cook for 25 minutes. Drain potatoes, let cool, and slice into 1/4-inch slices.

2. Heat oil in a skillet. Add onion and sauté for 5 minutes. Add onion to egg, sour cream, and pepper in a bowl and mix well.

3. Lay potato slices in a casserole dish. Spoon sour cream mixture over potatoes. Top with cheese.

4. Bake for 35 minutes at 350°F until top is browned.
