Serving size: 1/2 potato
This dish is a good addition to your brunch table.
2 tablespoons olive oil
1 small onion, chopped
1 clove garlic, minced
1 teaspoon dried sage
2 potatoes (4 to 5 oz. each) unpeeled, halved lengthwise, and sliced crosswise into thin slices
1. In a large skillet over medium heat, heat oil. Add onion and garlic and saute for 2 to 3 minutes.
2. Add sage and potatoes, cover, and cook for 10 minutes, stirring occasionally. Turn potatoes over with a spatula, and continue to cook for another 5 to 7 minutes until golden brown. Serve.
