1. In a large skillet over medium heat, heat oil. Add onion and garlic and sauté for 2 to 3 minutes.
2. Add sage and potatoes, cover, and cook for 10 minutes, stirring occasionally. Turn potatoes over with a spatula, and continue to cook for another 5 to 7 minutes until golden brown. Serve.
