1. In a large saucepan, boil potatoes over medium heat for about 45 minutes until you can pierce them easily with a fork (or bake them directly on a rack in a preheated 350°F oven for 45 minutes).
2. Let potatoes cool, and then gently peel them.
3. Mash potatoes with pineapple and spices and place in a casserole dish coated with nonstick cooking spray. Top casserole with almonds and bake for 20 minutes at 350°F.
