Candied Yams

Ingredients

4 medium yams (about 2-2 1/2 pounds)
1/4 cup firmly packed dark brown sugar
1 1/2 teaspoons cinnamon
1/2 teaspoon ground cloves
1 Granny Smith apple, peeled and thinly sliced
3/4 cup apple cider
2 tablespoons stick margarine, cut into pea-size pieces

Directions:

1. Preheat the oven to 350°F. Spray an 8 x 8-inch baking dish with nonstick cooking spray.

2. Place the yams on a baking sheet and bake until the skin feels soft to the touch, 60 minutes. Cool, peel, and slice into 1/8 - 1/4-inch rounds.

3. In a small bowl, whisk the sugar, cinnamon, and cloves.

4. In the baking dish, place half of the yams, then the apple slices, then half of the sugar mixture. Top with the remaining yams and sugar mixture. Pour the cider around the edges of the baking dish. Evenly scatter the margarine pieces on top.

5. Bake, covered, until bubbly and the yams are tender, about 40 minutes.

NOTE:
Since the yams need to cook for an hour before you make this recipe, you may want to prepare them a day or two in advance. Then just bake, cool, cover, and refrigerate them until you’re ready to make the dish.

All tuber vegetables vary in final cooking times due to individual differences in their starch content. As they mature, the starch begins to break down, and the vegetable will require a slightly shorter cooking time.
