Egg Surprise

Directions:

* "Before you start, ask about a container for the hot bacon fat." 1. Take 1 slice bacon. With a sharp knife, cut into 1/4 -inch pieces. Place bacon pieces in a 6-ounce custard cup. Lay a paper towel over the top. 2. Microwave at 100% power (700 watts) for 50 to 60 seconds or until almost crisp. 3. Coat the inside of the custard cup with some of the melted bacon fat by carefully swishing some of the bacon pieces around the sides of the cup. Pour off any extra fat into a container that is used for bacon fat. You won't need any more for this recipe. 4. Gently crack the shell on 1 large egg. Put egg in a second custard cup or small bowl. Be careful and don't break the yolk. Carefully slide the egg into the center of the custard cup on top of the bacon. 5. With a toothpick, poke the yolk two times and the white four times. These holes are needed so the yolk and white won't explode while cooking.

6. Pour over the yolk 1 teaspoon milk.

Cover the custard cup tightly with plastic wrap.

7. Microwave at 70% power (490 watts) for 45 to 60 seconds or until egg white is almost set. Remove from microwave oven.

8. Keep it covered and wait for 1 minute or until egg is done the way you like it.

9. Remove plastic wrap. Add any one of the following ingredients:
1/2 teaspoon Italian seasoned dried bread crumbs
Grated cheese
Taco sauce
Pepper


For Two Servings: Make two as above, preparing each serving in a separate custard cup. Place the cups several inches apart in the microwave oven. Cooking time for the bacon will be 20 to 30 seconds longer. Cooking time in Step 7 will be 1 1/4 to 1 1/2 minutes total.
