Remove skin from chicken. Rinse chicken and pat dry with paper towels; set aside.
In a 12 x 8 x 2-inch microwavable dish, stir stuffing mix, onion, celery, bouillon granules and parsley. Pour water over and stir until evenly moistened. Arrange chicken pieces on top with thickest parts toward outer edge.
Place butter in a small microwavable bowl. Microwave, uncovered, at 100% power (700 watts) for 45 to 60 seconds or until melted. Spoon evenly over chicken. Cover with waxed paper. Microwave at 100% power for 10 minutes. With tongs, rearrange and turn chicken pieces over; rotate dish one-fourth turn. Protect corners of dish with foil if stuffing begins to dry out. Re-cover. Microwave at 100% power 8 to 10 minutes longer or until juices run clear and no longer pink when cut along bone.
Lightly sprinkle with salt and pepper. Cover tightly with foil and let stand for 5 minutes. Serve with gravy.
