You can also top warm apples with a spoonful of vanilla yogurt for an energizing breakfast. Tart apples, like Rome, Greening or Granny Smith, are best for this simple dessert.
2 medium unpeeled cooking apples
2 tablespoons raisins
2 tablespoons honey
1/4 teaspoon ground cinnamon
2 teaspoons butter or margarine
Heavy cream, if desired
1. Core apples to within 1/2 inch of bottom. Peel 1 inch of skin from around middle of each apple to prevent splitting. Place apples in two 10-ounce custard cups.
2. Pack raisins into apples. Mix honey and cinnamon; pour over raisins into apples. Top with butter.
3. Cover tightly and microwave on High (100%) until tender when pierced with fork, 3 to 4 minutes. Serve warm with cream.
