5 pounds or larger standing beef rib roast
1 1/2 teaspoons salt
1 teaspoon pepper
Place in roaster pan on rack with rib side down and roast at 375 degrees for 1 hour. Turn off oven until 1/2 hour before dinner. Turn oven on again at 375 degrees for 30 minutes. DO NOT open oven door from first minute roast is put in until after the last 30 minutes. Season with salt and pepper. Roast will always turn out medium rare.
