1 large onion, chopped
2 cloves garlic, chopped
2 tablespoons olive oil
1 (20-ounce) bag frozen mixed vegetables
1 (48-ounce) can chicken broth
6 ounces chicken breasts, cooked, skinned and diced
1/2 cup heavy cream
Sauté onion, garlic, and olive oil until tender. Add mixed vegetables and chicken broth. Simmer until vegetables are tender; add chicken breast, and heavy cream. Gently heat through and serve.
