3 pounds stewing beef, cubed
1/3 cup vegetable oil
2 large onions, chopped
4 medium carrots, chopped
4 medium potatoes, cubed
3 ribs celery, chopped
4 cups beef broth
2 tablespoons tomato paste
2 tablespoons prepared mustard
1/2 teaspoon salt
1/8 teaspoon pepper
Dip stewing beef in flour and brown in vegetable oil. Drain all but 1 tablespoon drippings; add onions, carrots, potatoes, and celery. Cook about 5 minutes; add beef broth, tomato paste, mustard, salt, and pepper. Cover and simmer about 1 hour.
