For extra brownie points, substitute peppermint extract for the vanilla in the Chocolate Frosting and sprinkle crushed hard peppermint candies over the top.
1 cup sugar
1/3 cup margarine, softened
1 teaspoon vanilla extract
1/2 cup fat-free cholesterol-free eggs product, or 4 egg whites
2/3 cup flour
1/2 cup baking cocoa
1/2 teaspoon baking powder
1/4 teaspoon salt
Chocolate Frosting:
2/3 cup powdered sugar
2 tablespoons baking cocoa
1/4 teaspoon vanilla extract
3 to 4 teaspoons hot water

1. Heat oven to 350°. Spray square pan, 8 x 8 x 2 inches, with cooking spray. Mix sugar, margarine, vanilla and egg product in medium bowl. Stir in remaining ingredients except
Chocolate Frosting. Spread in pan.
2. Bake 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour. Frost with Chocolate Frosting. For brownies, cut into 4 rows by 4
rows.
Chocolate Frosting
Mix all ingredients until smooth and spreadable.
