Veggie Patch Stew


Serves: 6

Ingredients

3 zucchini , sliced
3 yellow squash , sliced
2 onions , chopped
2 tomatoes , chopped
1 eggplant , peeled and cubed
1 green pepper , chopped
1 clove garlic , minced
2 tablespoons butter , softened
1 teaspoon hot pepper sauce
1/2 teaspoon curry powder
1 teaspoon chili powder
1 salt and pepper to taste
1 Garnish: shredded mozzarella cheese

Directions:

Place all vegetables in a large Dutch oven over low heat. Stir in remaining ingredients except cheese. Cover and simmer for one hour, stirring frequently. Do not add any liquid, as vegetables make their own juice. Top portions with cheese before serving.
