The perfect topping for a Reuben sandwich or crisp salad, Thousand Island dressing is a delight--but the bottled low-fat stuff is sadly lacking in flavor. Making your own dressing is easy! If you use our homemade Mayonnaise, be sure to use the sauce within an hour. Because of the acidity of the added ingredients, it will lose its thickness within a few hours. (If you want to make the sauce well ahead of time, just opt for commercial reduced-fat mayonnaise; it will last in the refrigerator about 2 days.) The recipe can easily be halved.
1/2 cup mayonnaise (or commercially prepared reduced-fat mayonnaise)
4 teaspoons chili sauce or ketchup
2 teaspoons minced dill or half-sour pickles
1 teaspoon minced onions
1 teaspoon minced fresh parsley
In a small bowl, combine all ingredients. Refrigerate 10 minutes to allow flavors to blend.
