Substitute whichever herbs strike your fancy—say, thyme, basil, oregano, or tarragon—and this piquant, all-purpose dressing will take on a whole new character. It will last in the refrigerator about 1 week; shake well before using.
1 small clove garlic, minced
Pinch salt
2 tablespoons red wine vinegar
2 teaspoons Dijon style mustard
1/4 teaspoon fres marjoram, or 1/8 tsp dried
Ground black pepper to taste
1/4 cup low-sodium chicken broth
2 tablespoons extra-virgin olive oil
1. In a mortar and pestle (or a small bowl with a small spoon), mash the garlic and salt together into a paste.
2. In a small jar with a tight-fitting lid, combine the mashed garlic, vinegar, mustard, marjoram, and pepper; shake to blend. Add the broth and oil and shake until smooth.
