Basic Vinaigrette Dressing

Ingredients

1 small clove garlic, minced
pinch salt
2 tablespoons red wine vinegar
2 teaspoons Dijon style mustard
1/4 teaspoon fresh marjoram, or 1/8 teaspoon dried
ground black pepper to taste
1/4 cup low-sodium chicken broth
2 tablespoons extra-virgin olive oil

Directions:

1. In a mortar and pestle (or a small bowl with a small spoon), mash the garlic and salt together into a paste.

2. In a small jar with a tight-fitting lid, combine the mashed garlic, vinegar, mustard, marjoram, and pepper shake to blend. Add the broth and oil and shake until smooth.
