Created at Santa Barbara’s Hidden Valley Guest Ranch in California, ranch dressing has been a favorite since the ’50s. Our version is equivalent to the low-fat commercially prepared version, but tastes so much better, thanks to fresh herbs. When shopping for lite mayonnaise, compare labels; some are much lower in carbohydrate than others. Store in the refrigerator for up to 2 days; shake well before using. The recipe can easily be halved.
1 small clove garlic, minced
Pinch salt
1/3 cup low-fat (1%) buttermilk
1/4 cup lite mayonnaise
1 teaspoon fresh lime juice
2 teaspoons snipped fresh chives
1 teaspoon minced fresh parsley
1. In a mortar and pestle (or a small bowl with a small spoon), mash the garlic and salt together to a paste.
2. In a small jar with a tight-fitting lid, add the buttermilk, mayonnaise, lime juice, chives, parsley, and the mashed garlic; shake well to blend. Refrigerate at least 10 minutes to allow flavors to blend.
