Everyone should have a supply of this versatile spread in their refrigerators. It can be used almost anywhere you’d use cream cheese or sour cream: spread it on toast or bagels, dab some on a baked potato, stir it with some chopped herbs and a little reduced-fat mayonnaise to make a delightful dip. When buying yogurt, check labels and avoid any that contain starches or gums, as they will affect the texture.
3 cups fat-free plain yogurt
Spoon the yogurt into a coffee filter or cheesecloth-lined strainer; place over a large bowl. Cover with plastic wrap and refrigerate at least 8 hours or overnight. Discard the liquid.
