This quick white sauce works best as a base to add to creamed dishes; as a gravy, it may be a little plain. Key to success: instant-mixing flour, such as Wondra, which doesn’t need to be cooked before it is combined with the milk.
1 tablespoon unsalted butter or nondiet margarine
1 1/4 cups low-fat (1%) milk
2 tablespoons instant-mixing flour
1/4 teaspoon onion powder
Pinch nutmeg
1. In a small saucepan over medium heat, melt the butter and continue cooking, stirring constantly, until it becomes golden brown and fragrant, about 1 minute (watch for burning). Remove from the heat and let cool slightly.
2. Whisk in the milk, flour, onion powder, and nutmeg; return to the heat and cook, whisking constantly, until thickened, about 3 minutes.
